U.S. Open Food Truck

NEW YORK (MYFOXNY) - Chef David Burke and Chef Jennifer Cox are helping to feed the more than 700,000 fans expected at the U.S. Open of tennis later this month.

A stocked food truck hit the streets of New York City on Monday with dishes created by the famed chefs.

The U.S. Open Food Truck will be in the following locations, Aug. 11- Aug. 13:

August 11 beginning at 12 p.m. - Madison Square Park

August 12 beginning at 12 p.m. - Union Square

August 13 beginning at 5 p.m. - Bryant Park

FILET MIGNON SLIDERS (YIELDS 4 SLIDERS)

8oz - filet mignon medallion (log shaped)

1oz - cracked black pepper

1tsp - sea salt

2oz - cheddar cheese (4 - 1/2oz slices)

2oz - bacon, onion, jalapeno marmalade (see recipe)

4 each - potato roll

GARNISH

4 - 3 inch bamboo skewers

4 - cherry tomatoes

4 - slices of bread & butter pickles

Take one of each item above and simply place on skewer

METHOD

Place 8oz filet mignon medallion on side and roll in cracked black pepper and sea salt. Then cut into 4 - 2oz slices and place on preheated (high heat), lightly oiled grill for 1 ½ minutes on each side. Add one piece of cheddar and ½ oz of marmalade to each slider then grill for an additional 20 seconds. Place slider on potato roll and skewer with garnish.
