Opa! Fest to revel in Greek culture June 20 - 22

St. Nicholas Greek Orthodox Church celebrates its 21st anniversary of Opa! Fest. The event is billed at the largest on-going Greek festival in the metro Detroit area. Revelers can sample authentic Greek food and pastries, listen to live traditional music and folk dancing, and walk the plaka style marketplace. Admission is $2, or bring 3 cans which will be donated to Gleaners. Opa! Fest supports over 30 charities.

Tiropita (Greek Cheese Pie)

1 lb. Greek feta cheese, crumbled
½ cup small curd cottage cheese
1 stick butter (melted in a separate bowl)
2 eggs (beaten until slightly frothy)
1 pkg large sheet phyllo dough

In a medium bowl, place crumbled feta cheese, cottage cheese, two tsp. of melted butter, and two beaten eggs.
Mix together until ingredients are well combined.
Preheat oven to 350 degrees. Grease large cookie sheet with butter.

Unwrap phyllo dough, cut 3-inch wide strips, lengthwise.
Cover with a slightly damp towel to prevent drying out.
Working with two pieces of phyllo at a time (placed on top of each other) drizzle butter along the entire length of the phyllo and spread with the back of a spoon.

Take one tsp. of the feta mixture and place in one corner of the phyllo, at the bottom.
Grab the corner of the phyllo where you placed the feta mixture and fold it over diagonally to the opposite side of the feta.
Keep crossing side to side to make a triangle shape.
Butter the top of the phyllo triangle at every other fold.
Place on cookie sheet with a little room between each triangle.
Continue making the triangles until all the feta mixture is finished.
Recipe should yield 18-20 triangles.
Place cookie sheet in the middle rack of the oven for approx. 25 minutes, or until golden and puffed.

Let cool on wire rack.
Be careful not to eat them directly out of the oven as the inside will be too hot.
These may be frozen before cooking for baking at a later date.
Place in airtight container with parchment or wax paper between each layer.
Increase cooking time by 15 minutes, if frozen.
