Liquid Nitrogen Gazpacho



Smoked Tomato Gazpacho

Ingredients:

16 oz  peeled Roma Tomatoes
2 oz Flat Leaf Parsley (cleaned, stemmed, and rough chopped)
4 oz Carrots (rough chopped)
1 oz Cilantro (cleaned, stemmed, and rough chopped)
6 oz English seedless Cucumber (small diced)
4 oz Red Onion (small diced)
1 oz Lemon Grass
1 oz  Honey
1 oz Red Wine Vinegar
1 oz Sweet Chili Sauce
.5 oz Sriacha Sauce
Smoke Sea Salt (to taste)
8 oz water
10 oz White Bread
10 oz Sushi Rice
1 gal Liquid Nitrogen

Method:

Smoke tomatoes on house smoking device or on bbq grill
Take parsley, cilantro, cucumber, lemon grass, and water and blend with stick mixer
Take carrots, onions and lightly sauté, once cooled add to blended mixture
Add Smoked Tomatoes to mixture
Add other sessions and split into two equal batches
Add sushi rice to one, and bread to the other. (let sit under refrigeration for 24hrs)
Strain both gazpachos threw a fine mesh strainer (keeping them separate)
Take equal parts gazpachos and pour into metal bowl
Take 3 parts Liquid Nitrogen and slowly pour into bowl while stirring with a whisk
Once all Liquid Nitrogen is added stir quickly until all smoke has disrupted.
Place in chilled bowel and serve.
Nitrogen Kettle Corn to garnish

Peach Gazpacho

Ingredients:


16 oz canned Peaches in syrup (strain)
6 oz resaved Peach syrup
4 oz English seedless Cucumber (rough chopped)
1 tsp roasted Garlic
1 tbs charred Shallots
1 tbs Sherry vinegar
1 oz Cilantro (cleaned, stemmed, rough chopped)
1 oz Basil
10 oz White Bread
10 oz Sushi Rice
1 gal Liquid Nitrogen

Method:


Add peaches, syrup, cucumber, roosted garlic, shallots, vinegar, cilantro, and basil in to a bowl
Blend with stick blender
Split into two equal parts ( add bread to one, and rice to the other)
Let sit under refrigeration for 24 hours
Strain both gazpachos threw a fine mesh strainer (keeping them separate)
Take equal parts gazpachos and pour into metal bowl
Take 3 parts Liquid Nitrogen and slowly pour into bowl while stirring with a whisk
Once all Liquid Nitrogen is added stir quickly until all smoke has disrupted.

Nitro Moon Pie


Ingredients:
Yellow cake mix.
Bitter sweet chocolate chips
Marshmallow spread

Method:

Make standard yellow cake mix recipe and pour into mini muffin pans and bake
Melt chocolate chips over a double boiler until all chips have been melted
Take cooled yellow cake and apply marshmallow spread on one side and place a second cake on top.
Take cakes and place in freezer for 20 minutes.
Remove cakes from freezer and dip in chocolate.
Once all dipped place in refrigerator to set.
