DOWNTOWN MEMPHIS, Tenn. (FOX13) - Before the Sunset Symphony can play the first note, a major clean-up must take place at Tom Lee Park.

The people who build the structures at the Memphis in May BBQ Cooking Contest say taking it all apart takes about half the time it does to put it all together. It is hard to believe now, but at one time the BBQ cooking contest had only one tent. That quickly changed into every team having a tent and Bryan Butrum with Tennessee Scaffolding remembers when the next big change happened.

“I remember putting up the first scaffolding booth out here. Never had one before… All tents that’s how long I have been around...ha.ha,” says Butrum.

This year Butrum's company put up twelve structures and he says it just keeps getting bigger every year.

Basically you’re construction people and when you have to work around a bunch of people who are not used to this you have to be very careful.

And as big as the BBQ festival is, there will be no trace of it come this weekend.

With the Sunset Symphony set for this weekend and warm days between now and then, chances are most of the mud will dry up. But, don’t count on it. If you’re planning on coming to the Sunset Symphony, plan on some mud being around.
