Montreal-style bagels in New York City

Bagels are a staple of the New York diet. You can get them pretty much anywhere in the city, but now one place is changing up the formula. And it seems to be working.

"What we've done is taken a New York bagel dough and we're preparing it in the style of a Montreal bagel," says Noah Bernamoff, co-owner Black Seed Bagels.

Step one: hand roll. Step two: boil in a honey water kettle. Step three: bake in a wood-burning oven, and flip regularly to achieve perfect texture. What do you get? Buzz-worthy status.

"We had a line out the door, up to Spring Street and around the corner to Bowery for a good part of Saturday and Sunday morning," Bernamoff says.

It takes a lot to get a New Yorker excited over a bagel but apparently Bernamoff and Matt Kliegman, both known on the city food scene, have done it with Black Seed Bagels. Why the name? In Canada, poppy seeds are called black seeds.

"I think there's always room for very well made versions of everything," Bernamoff says.

The Nolita shop has only been open since Wednesday, but business has been booming. The store had to shut down Monday after it literally ran out of food over the weekend. By Tuesday it was back open with a much more manageable weekday lunchtime crowd.

Black seed goes above and beyond the basic schmear. It has horseradish cream cheese, beet-cured salmon, watermelon radish and herbs, and more.

One bite and I was sold.
