6 sweet potato's, baked
1 tablespoon olive oil
1 onion, chopped
3 cloves garlic, minced
1 pound ground beef
1 cup black olives, sliced (you can use green if you prefer)
2 hard-boiled eggs, chopped
1/2 cups currants or raisins
1) Preheat the oven to 400, place sweet potatoes wrapped in foil on a baking sheet and bake until done, about 45 minutes. Then set aside to cool.
2) Saute onions and garlic until they are translucent, then add ground beef, olives, currants and egg.
3) Slice the sweet potatoes open and scoop out some of the inside the create a "boat."
Stuff with the empanada filling and serve immediately.
