Lighten up your holidays: Crust-less pumpkin pie

Get this Meatless Monday recipe courtesy of Stephanie Vella from Sola Life & Fitness. It was adapted from

Serves: 8
Prep time: 30 minutes
Bake time: 40 – 50 minutes

One (1) 15 ounce can pumpkin puree
¼ cup sugar
2 tsp. pumpkin pie spice
2 eggs, slightly beaten
¾ cup 2% milk
Non-stick cooking spray

1. Preheat oven to 375 F. Spray pie plate with non-stick cooking spray.

2. In a medium bowl, combine pumpkin puree, sugar and pumpkin pie spice.

3. Add eggs, beat lightly with a fork until just combined. Gradually add milk and stir until fully combined.

4. Pour filling into pie plate, bake for 40-50 minutes. To test if pie is fully baked, insert a knife or toothpick near the center and remove. If it removes clean, pie is ready. Cool on wire rack, cover and refrigerate within two hours.
