Good Day Cafe: Bethenny Frankel

You may know Bethenny Frankel as a talk show host and former cast member of the Real Housewives of New York but did you know that she is a classically trained chef?

Frankel went to culinary school at the National Gourmet Institute.

She's prepaing a lighter chicken pot pie int he Good Day Cafe.

Lighter Chicken Pot Pie

Preheat oven to 400 degrees.

Ingredients: Chicken, mixed vegetables, celery, chicken broth, garlic salt and pepper. Tofu will also be out there for a vegetarian options

In a nonstick saucepan, combine the chicken, mixed vegetables, celery and onion. Add 1 cup of the chicken broth.

Cook over medium heat for 10 minutes.

Taste and season with half the garlic salt and half the pepper.

Get together oat flour, chicken broth, soy milk, Worcestershire sauce, salt and pepper.

In separate saucepan, over low heat, combine the oat flour and the remaining chicken broth and whisk it together until it thickens. Add soy milk and whisk until smooth.

Cook until mixture turns the color of peanut butter (about 5 minutes)

Add Worcestershire sauce, salt and pepper

For cooked chicken and vegetable mixture and cooked sauce mixture.

Add the sauce into the chicken and vegetables.

Pull out pre-made double pie crust and pie pan. The bottom crust will be preset in the pie pan.

Pour chicken and vegetable mixture, then cover with the pastry crust- press the edges down. Trim the edges and make a few slits on top.

Bake for 35 minutes.

Restaurant pot pie=770, Bethenny's lighter pot pie= 350 calories. Saves you 420 calories!
