Chef Evelyn Stokes stopped by the Fox 2 studios on Friday morning to prepare a tasty dish you can make with the kids. Chef Stokes works with the Health Alliance Plan and hosts several healthy cooking demonstrations and classes. On Friday she prepared an easy Hawaiian pizza. It's one of the new recipes that's uploaded to the HAP Cook eKitchen. It's a web based cooking program for kids.
Hawaiian Pizza Recipe
Mango and pineapple are the fun pizza toppings on this sunny and sweet Hawaiian pizza. This tasty fruit pizza will become a party favorite.
1/2 cup chopped red bell pepper
1/2 cup chopped green bell pepper
1/2 cup chopped red onion
1/2 cup chopped mango
1/2 cup chopped pineapple
1 Tbsp fresh lime juice
1/2 cup chopped fresh cilantro
1 (14-inch) store-bought whole wheat pizza crust
1. Preheat oven to 425°. In a large bowl, combine all ingredients except pizza crust.
2. Spread mixture over pizza crust. Bake pizza until the toppings are hot and the crust is browned, about 5 to 10 minutes.
3. Cut into 4 slices for lunch, or 16 slices for an appetizer.
Yield: 4 servings
