Ingredients:
1 Waffle prepared from your favorite mix or batter recipe

Homemade Mayonnaise:
3 egg yolks
Kosher Salt to taste
Ground Pepper to taste
1 T Dijon Mustard
1 1/4 C vegetable oil

Vine Ripened Tomato slices
Mixed Spring Greens
Applewood-Smoked Bacon

To make the mayonnaise:
Put eggs yolks and mustard in a food processor. Turn on the food processor, and slowly drizzle the vegetable oil into the egg/mustard mixture. The slower the better!
After the oil has been incorporated, add a pinch of Kosher salt and fresh ground pepper. Run the food processor for another second or two to incorporate.

Pan fry 2-3 slices of bacon, set aside.

Add the waffle batter to a well-heated iron.

When cooked, remove the waffle from the iron, and slice it down the center, creating two thick waffle piece. Spread mayonnaise on both pieces. Layer spring greens, tomato, and bacon slices, on one waffle piece, then top with the other to create a waffle sandwich.
