Father's Day dinner ideas done the Paleo way

Dads Favorite Fat-Burning Burger

Recipe:
2 Lbs. Ground Buffalo
1-1/2 Tbsp. Fresh Garlic, minced
½ Tbsp. cayenne
1 Tbsp. Dried Italian Herbs
3 Tbsp. Olive Oil
1/2 Cup Greek Olives, pitted and chopped
1/4 Cup Fresh Italian Parsley, chopped
1 10 oz. Can Roasted Red Peppers, drained and chopped
1 Egg
Sea Salt to Taste
Black Ground Pepper to Taste
1 Head Romaine Lettuce
1 Lemon

In a large stainless steel mixing bowl, combine the buffalo, garlic, herbs, oil, olives, parsley, peppers and egg and mix well. Divide into 8 equal burgers and set aside. Lightly spray grill with cooking spray then heat grill to high. Place the burgers on the grill and season as needed with salt and pepper. Turn burgers once to cook on both sides. Remove from the grill when cooked to desired doneness. Place onto Iceberg lettuce "buns," drizzle lightly with lemon juice and enjoy.

Dairy Free Pesto Topping:

Ingredients:
2 cups fresh basil leaves, packed
1/3 cup olive oil
1/3 cup walnuts
3 cloves of med size garlic
1/2 tablespoon salt
1/8 teaspoon ground black pepper
1/4 fresh lemon
1/4 fresh jalapeño

Blend. Best if refrigerated for 30 mins before.

Sweet and Salty Sweet Potato Fries

Ingredients:
1 1/2 pounds sweet potatoes, (about 3 medium), peeled
1 tablespoon extra-virgin olive oil
1/4 teaspoon salt
Freshly ground pepper, to taste
1 cup coconut aminos
2 tablespoons honey
1 teaspoon butter

1. Preheat oven to 425°F. Line a rimmed baking sheet with foil. Cut sweet potatoes into 1/2-inch-thick wedges. Place on the prepared baking sheet, drizzle with oil and toss well. Spread out in a single layer. Bake until tender when pierced with a knife, 25 to 30 minutes. Season with salt and pepper.
2. Meanwhile, combine coconut aminos and honey in a small saucepan. Bring to a boil over medium-high heat and cook until syrupy and reduced to 1/3 cup, 12 to 15 minutes. (Watch the syrup carefully during the last few minutes of reducing to prevent burning.) Swirl in butter. Drizzle the sauce over the sweet potatoes.

OMG! Grainless Chocolate Cake

Ingredients

6 Large Eggs
1/4 cup raw honey
1 teaspoon of vanilla extract
1/2 cup melted organic grass fed butter
1/2 cup applesauce
3/4 cup almond flour
1/4 cup cocoa powder
1 tablespoon ground cinnamon
2 teaspoons baking powder
1 teaspoon baking soda
1/4 teaspoon  of sea salt
1 cup dried blueberries

1. Preheat oven to 400 degrees Fahrenheit (205 C) and adjust rack to middle position
2. Combine your eggs, honey, vanilla, butter, and applesauce in a large mixing bowl or use a stand mixer
3. Sift coconut flour, cocoa powder, cinnamon, baking powder, baking soda, and salt over a medium bowl
4. Add dry ingredients to wet ingredients and whisk or mix until well blended
5. Fold in dried blueberries ensuring an even distribution throughout your batter
6. Spoon batter into six 3.5 inch greased ramekins and place on a cookie sheet
7. Bake for 15 minutes, or until a toothpick in the center comes out clean
8. Remove the muffins from the oven and let cool
9. Once cool, remove cakes from ramekins and let sit

Top with gluten free, dairy free vanilla frosting.
